Eating healthy and staying on track with a vegan diet can be a challenge, especially when it comes to snacking. It’s easy to reach for processed or sugary snacks, but these options can be detrimental to your health in the long run. That’s why it’s important to have a variety of healthy and satisfying vegan snacks on hand.
Today, I’m sharing four of my go-to Healthy Vegan Snacks that are not only delicious but also nutritious. These snacks are easy to make and can be prepared in advance, so you can have them on hand when you need a quick pick-me-up. Whether you’re looking for a sweet or savory option, these snacks are sure to satisfy your cravings without compromising your health.
Vegan Banana Oat Muffins:
- 1 cup rolled oats
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/2 cup unsweetened almond milk
- 1 tsp vanilla extract
- 2 ripe bananas, mashed
Preheat the oven to 350°F. In a medium bowl, mix together the oats, flour, baking powder, baking soda, and salt. In a separate bowl, mix together the maple syrup, almond milk, vanilla extract, and mashed bananas. Slowly add the dry ingredients to the wet ingredients and mix until well combined. Grease a muffin tin or line with muffin cups, and fill each cup about 3/4 full with the batter. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.
Vegan Energy Balls:
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup ground flaxseed
- 1/4 cup unsweetened shredded coconut
- 1 tsp vanilla extract
- 1/4 tsp salt
In a medium bowl, mix together all ingredients until well combined. Roll the mixture into small balls and place on a baking sheet. Chill in the refrigerator for at least 30 minutes. These energy balls can be stored in an airtight container in the refrigerator for up to a week.
Vegan Chocolate Chip Avocado Mousse:
- 1 avocado
- 1/4 cup unsweetened cocoa powder
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 cup vegan chocolate chips
In a food processor, blend the avocado, cocoa powder, maple syrup, and vanilla extract until smooth. Stir in the chocolate chips. Spoon the mixture into small cups or ramekins and chill in the refrigerator for at least 1 hour before serving. This mousse can be stored in an airtight container in the refrigerator for up to 3 days.
Vegan Cucumber and Hummus Wraps:
- 1 English cucumber, sliced lengthwise into thin strips
- 1/2 cup hummus of your choice
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Spread a thin layer of hummus onto each cucumber strip. Top with diced red bell pepper, red onion and parsley. Season with salt and pepper to taste. Roll up the cucumber strips and secure with a toothpick. These wraps can be served immediately or chilled in the refrigerator for 30 minutes before serving. They can also be stored in an airtight container in the refrigerator for up to 2 days.
